Tofu improves the digestability of the soybean. Tofu is inexpensive, low in calories and full of protein, mineral and vitamins. Tofu is cooling and yin by nature and is beneficial when eaten in moderation during warm weather and by those with heat signs (red tongue, red face, aversion to heat, feeling too hot).

Cooking time: 10- 15 minutes

Creamy Sauce:
2 tsp lemon/lime juice
1 tbsp miso
1 tsp sesame butter (or whole brown tahina)
1/3 cup water
parsley
Method:
Preheat oven to 350F.
Stack slices of tofu on end in a shallow baking dish, slightly tilted and leaning on eachother (/////).
Blend ingredients together to make a creamy sauce.
Spoon over top of tofu.
Bake 15-20 minutes covered.
Garnish with parsley.
